Things I learned at the grocery store this weekend:
1. I can't get out of that place in under 20 minutes. Impossible.
2. They have some weird produce out there. Down right scary. Weird people too.
3. Mini egglplants are my new love. Hate the bitter biggies? Not a problem with the minis (ok - my rhyming quota for the week has been fullfilled :)
4. Healthy food isn't as expensive as I thought! Picking the right items (veggies) made it so that I bought more for less money. Who knew?

how did you prepare the mini eggplants?
Mini egg plants....hmm may have to try!! :)
Too funny. I DID get out of the store in 20 minutes today, but didn't bring home a whole lot. ;-)
Path to Health
I just put them with olive oil, salt, pepper, and threw them on the George Forman :) Was so much better than I expected. Same thing happened to me with asparagus. I think it may have needed a little fresh garlic though.
I LOVE egg plant! Love Love Love it!! Just plain with salt satuee'd. Nummy!!
Hope you have a wonderful week!

People get out of the grocery store in less than 20 minutes??? What??? Who are these people?
Nice rhyme! How did you prepare the minis? I love eggplant.
Yum, the way you did your mini eggplants sounds a lot like how I like to do my zucchini. Will have to look for mini eggplant next time I'm shopping.
You can eat so much better when you eat healthy.
I love to slice the mini eggplants thin and put them on the grill with garlic, salt and pepper, flip them over and hit them with a bit of parm cheese and top them with fresh chopped basil...I'm adding them to the grocery list as I type!!
Mouth it totally watering with Diana's suggestion. Will certainly try it!
I never think of eggplants. It's good to know they come mini sized too! I'm on my own when it comes to most vegetables (stubborn spouse) so a mini eggplant would be an excellent solution!
20 minutes is tough, especially when I look at all of the labels! :)
Have a fantastic weekend!
Diana, Thanks for the words.
I don't think I can get out in less then an 40 minutes. If it's the weekly shopping, I'm stuck for over and hour.
After many months of spending too much money I have decided to spend only cash on groceries. Before we would just put things in the cart because we knew we had the money in the bank. Now when we go shopping, if we only have 50 bucks we only spend 50 bucks. This makes us take a hard look at what we are buying so that we only buy what we need.
